CAULIFLOWER SOUP
This is a healthy, easy and delicious cauliflower soup with a lovely creamy texture!
Ingredients
- 1 Tbsp. Green onions
- 1 Tbsp. salt
- 1 whole Cauliflower Diced
- 1 small Onion Diced
- 1 Tbsp. garlic Crushed
- 1/2 Tbsp. olive oil
- 32 oz. Homemade Vegetable Broth
Instructions
- In a dutch oven pot (or heavy pot), heat olive oil over medium heat. Add onion and garlic. cook until softened, about 5 minutes.
- Add cut up cauliflower and vegetable broth. Bring to a boil then cover and simmer for 15-20 minutes until cauliflower is softened.
- Carefully pour entire contents of pot into blender. Add salt.
- Carefully blend until smooth. Serve in bowls with sliced green onions. Enjoy!
