SPINACH CILANTRO MEATBALLS

Meatballs are an easy and inexpensive way to get nutrient-dense goodness into your family. These spinach cilantro meatballs are kid-friendly and freeze well for later.

Course Dinner, Snacks

Ingredients
  

  • 2 large Eggs
  • 1/2 cup Cilantro fresh
  • 2 cups Spinach fresh
  • 1 Tbsp. salt
  • 1/2 medium Onion diced
  • 2 lb. Beef
  • 1/2 tsp. Herbamare Seasoning
  • 1 tsp. Cumin

Instructions
 

  • Use your choice of ground meat (beef, pork, chicken, turkey, bison)
  • Preheat oven to 400°F and line with unbleached parchment paper
  • Chop Spinach, Cilantro and whip eggs.
  • Combine all ingredients in a large bowl and mix well until fully combine.
  • Roll into small balls and place onto prepared baking sheet.
  • Bake for 25 minutes, until meatballs are beginning to brown and cooked all the way through.

Notes

Refer to 'Seasoned Salt Recipe' for replacement for Herbamare.
