GOLDEN CAULIFLOWER HUMMUS
This golden turmeric cauliflower hummus is an easy, tasty, paleo, vegan and gluten free dip that's made with wholesome ingredients. Works great as a snack or appetizer.
Ingredients
- 4 cups fresh cauliflower florets
- 2 lg cloves garlic
- 2 Tbsp Lemon juice
- 3 Tbsp olive oil or avocado oil
- 2 Tbsp tahini
- 1/2 tsp Ground Turmeric
- 1/4 tsp Ground nutmeg
- 1/2 tsp Sea Salt or more to taste.
Instructions
- Preheat oven to 425 F. Line a sheet pan with parchment paper or silpat mat.
- Lay the cauliflower florets out on the pan and drizzle lightly with avocado or olive oil. Roast for 40 mins, or until cauliflower is golden. When done, allow to cool
- When cauliflower is cooled, place all of the ingredients in a food processor or high powered blender and blend until smooth.
- Garnish with olive oil, roasted pine nuts, kalamata olives and/or chopped parsley.
Notes
Serve with homemade nut crackers or use as a veggie dip.
*Remember, if you are having a difficult time flipping the switch in spring, substitute lemon juice for vinegar. Start with 1 Tbsp and add to taste.
