FLAVOURFUL SEED CRACKERS
For salt loving snackers, this is a quick and easy whole food cracker made with no sugar, grain or artificial ingredients. The added nutrition-packed sea vegetables, sesame seeds and cucumber lend a flavour reminiscent of sushi- but is still light enough to combine with other savoury dips. Recommend to try with WF Spring Sour Cream
Ingredients
- 1/2 large cucumber shredded
- 0.30 Cup Sesame seeds
- 1 Cup Pepita
- ¼ Cup Dried Sea Vegetables Optional nori/dulse/kelp Flakes
- ¼ + ¼ Tsp. Sea Salt
- 1 Tbsp. olive oil
Instructions
- Preheat oven to 350°C
- Shred cucumber with a grater or in the food processor
- Place in colander and mix in ¼ tsp of sea salt. Allow to drain excess water for 15 minutes.
- Toast sesame seeds in a dry frying pan over medium heat for 5 minutes, stirring constantly.
- Grind pumpkin seeds in blender or food processor, pulsing so texture is still coarse.
- Chop up the sea vegetables (if using) in the same way so that they are the same size pieces.
- Squeeze remaining water from cucumber and place in food processor bowl.
- Add remaining ingredients and pulse a few times until the consistency is even.
- Line a baking sheet with parchment paper and pour on dough mixture.
- Press dough out evenly until a layer of ? inch has formed.
- Score the dough to create cracker size of your choice.
- Bake for 15 minutes until colour is golden and edges are crispy.
- Allow to cool. Can store in an airtight container for up to 1 week.
