BAKED CHICKEN WITH GARLIC AND DIJON

This recipe is easy and excellent. Feel free to use chicken thighs as well.

Ingredients
  

  • 4 lbs Chicken legs, thighs
  • 1/4 cup Light olive oil
  • 4 cloves garlic minced
  • 4 Tbsp fresh parsley chopped
  • 3 Tbsp Lemon juice
  • 2 Tbsp Dijon Mustard
  • 1 Tbsp- Sea Salt
  • 1/2 tsp Black Pepper

Instructions
 

  • In a small bowl, combine all of the marinade ingredients(*) and stir or whisk together until well blended.
  • Transfer chicken legs to a large mixing bowl or a large ziploc bag. Pour the marinade over the chicken and toss with your hands to evenly coat the chicken, pushing some of the marinade under the skin of each leg for richer flavour. Cover bowl or seal bag and marinade for 6 hours or overnight.
  • Preheat oven to 400 F and line a rimmed baking sheet with foil or silpat liner. Arrange chicken skin side down and bring chicken to room temperature while oven preheats. Bake in the center of the oven for 25 mins then turn over and bake an additional 25 mins. For crispier skin, broil on high heat 1-3 minutes or until skins have browned.

Notes

(*) If you are having a hard time flipping the switch in spring, omit the lemon juice and add 1 Tbsp. of vinegar.
