HOT BEEF LETTUCE WRAPS
Ingredients
- 2 tsp. olive oil or avocado oil
- 1 lb. lean ground beef
- 1 Tbsp. fish sauce
- 1-2 Tbsp. chili sauce
- 2 Tbsp. water
- zest from 1 lime
- juice from 1 lime omit for WildFit spring
- ¼ cup green onion thinly sliced (see notes)
- ½ cup fresh cilantro chopped (see notes)
- 1-2 heads iceberg lettuce (see notes)
Instructions
- Heat the oil in a heavy frying pan over medium-high heat, then cook the beef until its cooked through and starting to brown, breaking apart with a turner as it cooks.
- While beef cooks, mix together the fish sauce, chili sauce and water in a small bowl. Zest the skin of lime and squeeze juice (omit juice for wildfit spring) Thinly slice green onions and chop the cilantro. Remove outer leaves of lettuce, cut out the core and cut the lettuce into quarters to make "cups" to hold the beef mixture.
- When beef is done, add the chili sauce mixture and let it sizzle until the water has evaporated, stirring a few times to get the flavor mixed through the meat. Turn of the heat and stir in the lime zest, juice, green onions and cilantro.
- Serve meat mixture with iceberg lettuce leaves to fill with meat and wrap around it, to be eaten with your hands.
Notes
If you do not like cilantro, then double the amount of green onion you use.
You can also try substituting iceberg lettuce for romaine or bib.
