Melt coconut oil in a large sauce pan. Add ground beef and brown.
Once browned, remove from pot.
Drain fat from pot but leave about 1 tablespoon to saute.
Add onion and garlic to pot and saute until soft, then add browned beef back to pot.
Sprinkle curry powder, salt and pepper over beef mixture and continue to cook.
If your mixture seems too dry, you can add a small amount of bone broth or water.
Add shredded cabbage to the pot. Stir to mix well then cover and simmer, until cabbage is wilted. Stir at 15 minutes.
Once cabbage has cooked, you can taste and add more curry or seasoning as desired.
Notes
Feel free to add additional vegetables as you like, depending on the season. Also consider trying ground turkey or pork
