MAYONNAISE

This recipe is so easy to make and great replacement for processed store bought mayonnaise.

Ingredients
  

  • 2 Eggs
  • 2 cups Avocado Oil
  • 2 Tbsp. Apple Cider Vinegar or vinegar of your choice
  • 1 tsp. fine celtic sea salt
  • OPTIONAL
  • 1 tsp. Dry mustard
  • 1/4 tsp. Cayenne Pepper

Instructions
 

  • Combine the eggs, vinegar, salt, mustard (if using) and cayenne (if using) in a blender*** and pulse a few times until frothy.
  • With the blender running, add the olive oil a little at a time – almost drop by drop at first – until an emulsion starts to form.
  • Continue adding the rest of the oil in a slow, steady stream.
  • Add more salt or other ingredients to taste.
  • Store, tightly covered, in the refrigerator for up to 7 days.

Notes

This is a great base for flavoured Mayo's.  Try adding some chipotle powder or sriracha powder for a spicy addition to fish or burgers.
