SAUTEED RAPINI WITH MUSHROOMS

Ingredients
  

  • 1 bunch Rapini
  • 2 tsp. Kosher salt
  • 1 Tbsp. Olive Oil
  • 5 cloves Garlic thinly sliced
  • 1/2 cup Mushrooms sliced
  • 3/4 tsp. Red Pepper Flakes

Instructions
 

  • Trim 1 1/2 inches off the stems of the rapini, discard trimmings and cut into 2" pieces.
  • Bring a large pot of water and 1 tsp. of the salt to a boil.
  • Add the rapini and cook until slightly tender and bright green, about 2 minutes. Drain and set aside
  • Heat a large, deep non stick fry pan over med-high heat.
  • Add olive oil, garlic and mushrooms and cook, stirring until for about 2 minutes.
  • Add the rapini, pepper flakes and remaining 1 tsp of salt. Cook stirring until heated through, about 2-3 minutes
