SAUTEED RAPINI WITH MUSHROOMS

Olive Oil

Instructions
Trim 1 1/2 inches off the stems of the rapini, discard trimmings and cut into 2" pieces.
Bring a large pot of water and 1 tsp. of the salt to a boil.
Add the rapini and cook until slightly tender and bright green, about 2 minutes. Drain and set aside
Heat a large, deep non stick fry pan over med-high heat.
Add olive oil, garlic and mushrooms and cook, stirring until for about 2 minutes.
Add the rapini, pepper flakes and remaining 1 tsp of salt. Cook stirring until heated through, about 2-3 minutes
