SAUTEED RAPINI WITH MUSHROOMS
Ingredients
- 1 bunch Rapini
- 2 tsp. Kosher salt
- 1 Tbsp. Olive Oil
- 5 cloves Garlic thinly sliced
- 1/2 cup Mushrooms sliced
- 3/4 tsp. Red Pepper Flakes
Instructions
- Trim 1 1/2 inches off the stems of the rapini, discard trimmings and cut into 2" pieces.
- Bring a large pot of water and 1 tsp. of the salt to a boil.
- Add the rapini and cook until slightly tender and bright green, about 2 minutes. Drain and set aside
- Heat a large, deep non stick fry pan over med-high heat.
- Add olive oil, garlic and mushrooms and cook, stirring until for about 2 minutes.
- Add the rapini, pepper flakes and remaining 1 tsp of salt. Cook stirring until heated through, about 2-3 minutes
